Our 1795 Signature Farmstead Cheddar is a a multi-award-winning, artisan cheese handcrafted in small batches with fresh milk from our own small herd of dairy cows in Latrobe, Pennsylvania.
Named in tribute to the year our family started farming in Western Pennsylvania, this cheddar is patiently aged to reach peak maturity.
Both crumbly and creamy with abundant tyrosine crystals that deliver delightful crunchy bursts of intense umami and pronounced sweet undertones, this cheese has a bold sharpness that opens with rich classic cheddar flavor, that then unfolds into pronounced sweet undertones, evocative of caramelized sugar, toasted nuts, butterscotch, and subtle fruity citrus brightness reminiscent of pineapples.
These layers create an addictive interplay of tangy piquant notes and lingering nutty sweetness, without the harsh acid bite of traditional aged cheddars.
Accolades include a Bronze Medal at the 2024 World Cheese Awards in Portugal, a Bronze Medal at the 2025 World Cheese Awards in Bern Switzerland, and a 2nd best of show at the Pennsylvania Farm Show.
